Our pungent black, hot and peppery green, and mild white peppercorns all come from the same plant, the Piper nigrum. The differences in color and flavor of these peppers depends on the maturity and processing techniques. Green pepper is harvested at the earliest stage of ripeness and dried quickly while black pepper is harvested midway during ripeness and is then dried slowly. White pepper is harvested when it is red and ripe; the washed outer shell is removed and the white core without the pulp is then dried. The intense and warm Tellicherry also comes from the green fruit but is harvested shortly before the onset of the ripening process.
The sharp and citrusy Sichuan Pepper, also known as Chinese coriander, comes from the pepper plant Zanthoxylum simulans of China. Our sweet and fruity pink peppercorns come from the plant Schinus molle of Central and South America.
It is highly recommended to purchase whole peppercorns since pre-ground pepper tastes will generally dull and fade by the time it is used.
